Rainy day in good ol' TX

Today has been a very rainy day in Texas! There is a ditch in the back of our apartment buildings that is usually pretty dry or with a little bit of water. Look what happened! It was a full-on river! My friends and I wish we had a tube or even a canoe so we could have gone down it :)

I didn't even want to step outside while it was raining, so I decided to make enchilladas for dinner! They were VERY yummy and pretty easy too! I had a recipe and then adapted it to the ingredients I had which turned out delish. The recipe is below. Here they are cooking away in the oven, and the final result is the following picture.

Creamy Chicken Enchilladas:
4-6 cooked chicken breasts, cut up in cubes
1/2 cup salsa
1/2 cup sour cream
1 can cream of chicken soup
1 cup cheese
Tortillas (the Costco you-bake tortillas are the best!)
Mix salsa, sour cream, and cream of chicken together. Half the mixture then add chicken and cheese in one half. Fill tortillas with the chicken mixture. Spray cooking spray on bottom of pan and spread half of the sour cream mixture on the bottom. Put tortillas filled with chicken mixture in the pan then spread the rest of the sour cream mixture on top. Sprinkle with cheese. Cook at 350 for 25 minutes. Enjoy!

I got a job at Texas Land and Cattle Steakhouse! I'm excited to have something to fill my time and make some bucks. It is a lot like Ruby River so I already feel really comfortable working there, and the food looks SOOO good! I had my orientation on Friday and I train all this coming week. I also got a job as a part-time nanny and help to this woman who just lost her husband. I'll meet with her on Wednesday to talk about what she needs me to do. Things are moving along here in the heart of Texas!

I'm a BYU Graduate!!!

BYU blue pedicure!

Graduation way April 23 and 24, 2009. We had commencement with the whole university and then convocation the next day with each college where we all walked. I graduated with a Bachelor of Arts in Communications with an emphasis in Public Relations. I CAN'T BELIEVE I'M A BYU GRADUATE! It's what I've spent my whole life looking forward to and I did it! I am so grateful for my experiences at BYU. I learned so much for my career, but I also learned a lot more than that. BYU is such an amazing institution that strengthened my testimony and helped me to become a better person and realize my potential in this life. I like the motto when you enter campus, "Enter to Learn, Go Forth to Serve." I feel better prepared to help spread the word of the Lord. I also learned that I am capable of so much more than I ever thought! When I had a million deadlines and so many things to do I would say to myself, "Where do I even start?" But then I would plunge forward and I was always able to get everything done. I'm such a sentimental person that it is almost sad that I graduated. Those were such wonderful years! I met so many fun people and laughed harder than I ever thought possible. There were hard times too, but I think everything works out the way it is supposed to in the end. It's weird to think that up until this point, my whole life has been planned! I didn't really think about after college because that seemed very far in the distance, but now it is here! I remember thinking when I was younger that high school kids were sooo old, and then when I got to high school I thought college kids were sooo old. Now I'm a college grad....am I sooo old?! Ha ha I know I have a lot of life left, but it's a mystery from here. I'm just lucky I was accepted into the best university and that I learned so much while studying at BYU. What a beautiful blessing.

Tyler's 26th birthday!

Tyler had a fun birthday this year! We went to Happy Sumo with his family + extended family on his birthday night then went to see the movie 17 Again which was pretty funny!

After the movie we went to get ice cream at Cold Stone
The next night I threw a surprise party for Tyler! It was so fun because he had no idea and he is so hard to surprise! We had a yummy ice cream cake and Ashley & Bobby and Connie, Courtney & Marc, Amy & Dave, Josh, Drew, Lindsay, Katelin and his parents came! It was so much fun! On Tyler's birthday I had a scavenger hunt for him all around his parent's house. I put each clue in a balloon and Tyler had to pop the balloon to read it. These were all the clues: 1) This is the start of your birthday scavenger hunt! Go to a place where suds abound and things get clean! (the laundry room) 2) Good job! Next travel to the place where your sister should have slept, but it was a little too late...(Heather's bedroom in the house, but she never lived here. It was too late because she was already married!) 3) Well done! You're on a roll now. Next to a place where silly faces are made and old times are found! (Walt's office...he has lots of pictures on his computer!) 4) Way to go! You'll find your next clue in a place that is hardly used, but relaxing all the same! Can you pass the shampoo? (The bath tub in Walt and Carol's room) 5) You're an expert now! Go to the place that has all of the holidays...all year round! (The storage room in the basement with all the holiday decorations) 6) Wonderful, you're almost there! What, we're running out of food? (The food storage room) 7) Well done! You'll find your next clue where patriotism abounds! (The bedroom that is decorated patriotically) .... then he found his present sitting in there! I wrapped some heavy things and put a paper in the box telling hime what his real present was. I got him some ammunition for his gun! Happy birthday Ty!

Carol's 50th Surprise Birthday Party

Carol's (my mother-in-law) 50th surprise birthday party was at Chef's Table on Saturday afternoon! She had no idea and it was so much fun to see how surprised she was! Her mom and sister came in town with excuses of wedding planning for her niece. On Saturday before they left, they wanted all the girls to have a fun lunch...at Chef's Table! So all the girl's piled in the car and we went to have our "girl's lunch." On the way there, Carol said, "Let's go to Goodwood, I love that restaurant!" We said, "No, let's go to Chef's Table. Your mom has never been there." When she walked in she was so shocked! She had no idea! It was a lot of fun and great surprise, with very yummy food!

Easter Weekend in Vegas

We had a great Easter weekend in Vegas! We died Easter eggs, set up an egg hunt for the kids, bought some fun makeup at MAC, went to Luv It Custard, Tyler tried on Grannybird's old glasses (ha ha looking good babe!), we went to Cheesecake Factory for dinner, and woke up at 5 a.m. for the annual family sunrise service with scones afterward. It was a fun weekend!
