Rainy day in good ol' TX

Today has been a very rainy day in Texas! There is a ditch in the back of our apartment buildings that is usually pretty dry or with a little bit of water. Look what happened! It was a full-on river! My friends and I wish we had a tube or even a canoe so we could have gone down it :)

I didn't even want to step outside while it was raining, so I decided to make enchilladas for dinner! They were VERY yummy and pretty easy too! I had a recipe and then adapted it to the ingredients I had which turned out delish. The recipe is below. Here they are cooking away in the oven, and the final result is the following picture.

Creamy Chicken Enchilladas:
4-6 cooked chicken breasts, cut up in cubes
1/2 cup salsa
1/2 cup sour cream
1 can cream of chicken soup
1 cup cheese
Tortillas (the Costco you-bake tortillas are the best!)
Mix salsa, sour cream, and cream of chicken together. Half the mixture then add chicken and cheese in one half. Fill tortillas with the chicken mixture. Spray cooking spray on bottom of pan and spread half of the sour cream mixture on the bottom. Put tortillas filled with chicken mixture in the pan then spread the rest of the sour cream mixture on top. Sprinkle with cheese. Cook at 350 for 25 minutes. Enjoy!

I got a job at Texas Land and Cattle Steakhouse! I'm excited to have something to fill my time and make some bucks. It is a lot like Ruby River so I already feel really comfortable working there, and the food looks SOOO good! I had my orientation on Friday and I train all this coming week. I also got a job as a part-time nanny and help to this woman who just lost her husband. I'll meet with her on Wednesday to talk about what she needs me to do. Things are moving along here in the heart of Texas!

I'm monitoring two ESL students on their standardized tests in my room right now during my prep period and found myself with a few extra minutes (while they're reading passages and bubbling in the answers) to check out your latest posts. Looks like good times for you two still!

Is it starting to get hot down there yet? We're still enjoying some pretty mild temps and I hope it stays that way for awhile before it jumps to a hundred and four degrees.

Duncan is living with us until his wedding in about 3 weeks. Jamie and Shawn will be spending just tonight with us in the process of moving Jamie from Butte to her new home with her Kevypoo.

Is your mom still here?

This is like a letter, not a post comment. Sorry. I should have called or sent you an email. :>)
